My mom is a great cook, and but I cannot forget one dish she made with Okinawans fruit called “Goya” Goyoa is an Okinawan language and in Japanese, it is called nigauri. 苦瓜 The kani (苦）means “bitter” in Japanese. Goya is a tropical vine of the family Cucurbitaceae, widely grown in Asia, Africa, and the Caribbean for its edible fruit, which is among the most bitter of all fruits. (wikipedia)
So nigauri is actually a fruit..no way! Because it is really bitter. My mom made me eat because it’s rich in vitamin C and it is extremely bitter..thus must be good for health!! In Okinawa, Goya is used for a stir-fried dish called goya champuru. I guess we can remove some bitterness using salt once it is cut up and then rinsed.
