Getting to Know Sushi


For lovers of international cuisine, Sushi is one of the more intimidating dishes. The concept of eating raw fish disgusts many and raises health concerns. However, it is important to realize that unlike fish purchased in the grocery store, the fish used for sushi is high grade and remarkably fresh. Using high grade, fresh fish, shrimp and other seafood ensures that the sushi is safe for consumption.

The Real Sushi

There are a few things that you should keep in mind when you pursue the world of Sushi. There are many different types of foods that acquire the label of sushi. However, there is only one type of sushi that truly meets the requirement to be sushi. In order for a dish to be considered sushi, it must use vinegar rice and fermented fish. This traditional sushi, which bears the rough translation of “its’ sour”, is born from the sour flavor of both the rice and the fish. Today, only one region in Japan, located near Lake Biwa, still serves this traditional form of sushi.

In modern times, sushi has taken several forms, including sushi rolls, called Makizushi, which is among the most popular around the world. Sashimizushi is raw fish served alone, while Nigirizushi is raw fish on a bed of hand formed rice. Most Japanese restaurants and sushi bars in the United States and Canada refer to these dishes by the first part of their name, as zushi-refers to the fact it is sushi.

How to Eat Sushi

Sushi can be eaten several ways. Typically, it is served with soy, ginger and wasabi to enhance the flavor of the fish and rice. When modern sushi was created, it was meant to be eaten with ones fingers while out in town or at the theater. This allowed people to spend their time enjoying festivities rather than eating in a restaurant. This opened the door for small stands to sell sushi on demand. In restaurants, sushi is typically eaten with chopsticks, although eating it with fingers is perfectly acceptable, especially in Japanese restaurants.

While sushi is best from a specialty restaurant, many places that serve Japanese cuisine will also serve sushi. However, many people who prefer sushi will only purchase sushi, although dishes such as gyoza may be eaten as well.

Sushi is typically partnered with sake, or Japanese rice wine, although it is not uncommon for green teas to also be served. The more traditional the Japanese restaurant, the more likely that green tea and sake will be readily available and served in accordance with Japanese customs.
